COVID-19 Student Corps

 Below please see the message from the Department of Education seeking youth to enroll in the COVID19 Student Corps.

As we move toward reopening our schools in the fall, we need all hands on deck to ensure students 12 years old and older across the country are vaccinated before they go back to school in the fall. Our best path out of the COVID-19 pandemic is for every American to get a COVID-19 vaccination as soon as it’s available to them. The Biden-Harris Administration is excited to announce the launch of COVID19 Student Corps, a program within COVID19 Community Corps specifically focused on students.

As a member of Student Corps, you’ll get resources to help you build vaccine confidence in your community, including:

  • Biweekly calls to learn best practices and hear from other students how they are talking to their friends, families, and other community members about getting the vaccine
  • Fact sheets on vaccine safety and hints for planning and attending community events
  • Social media content to share with your followers
  • Regular email updates with the latest vaccine news and resources to share

Farm to Fork the Youth Edition

Have you or your family ever wondered where their favorite foods come from, or what makes their favorite dish come to life? In the 4-H Expanded Food and Nutrition Education Program (EFNEP), we teach youth participants the importance of eating healthy and eating fresh produce throughout the year. Shopping at your local farmers market or local produce stands are great ways to get fresh, seasonal items. But did you know most local farmers markets offer more than just fruits and vegetables? They also sell fresh local meats, eggs, and some of our favorite jams and jellies. Here in Robeson County, our local Farmers Market hosts and highlights farmers who grow seasonal items to sell. Examples of items you may see now at your local farmers market: blueberries, cabbage, collards, corn, melons, peppers, tomatoes, zucchini, and squash just to name a few. Some farmers even offer special “deals of the day” to highlight their produce.

Another way to get fresh produce is planting your own family garden. Start with planting your favorite fruits, vegetables, and herbs. Research different beginner gardening techniques and see which one would work best for you and your family. Container gardening is my favorite way to grow herbs. It is easy to store small containers around your kitchen where it is easy for herbs to thrive. Also raised bed gardens can be placed in areas normal gardens can’t, and can take up less space for small plant options.

Below is a simple, fun, and easy recipe sure to please everyone, along with kid-friendly tips they can do in preparing the recipe. It also uses tomatoes, which are in season right now. Remember to practice kitchen safety when preparing food and handling raw eggs and meat.

Cheese Breakfast Burrito

Ingredients

  • Non-stick cooking spray
  • 2 strips turkey bacon
  • 2 eggs
  • ¼ cup chopped green peppers
  • 1 (10-inch) whole-wheat tortilla
  • 1/8 cup shredded cheddar cheese
  • 1 tomato, sliced

Directions

  1. Spray skillet with non-stick cooking spray.
  2. Cook turkey bacon until crispy. Break into small pieces and set aside.
  3. Crack eggs in a bowl and lightly beat with a fork.
  4. Using the same skillet and extra spray if needed, sauté green peppers over medium heat until tender.
  5. Add eggs to skillet with peppers and continue stirring until eggs are set.
  6. Divide cooked eggs into two portions. Place one portion on top of each tortilla.
  7. Top with cheese, turkey bacon, and tomato.
  8. Wrap burrito.

Kids help in the Kitchen (Cheese Burrito Recipe):

  1. Crack egg, Cracking eggs is a great way to start teaching how to make simple dishes.
  2. Lightly beat eggs with fork.
  3. Spray skillet with cooking spray.
  4. Add eggs to skillet and stir until eggs are set, with supervision of an adult.
  5. Place cooked eggs on each tortilla.
  6. Topping for the burrito and wrapping.

Sew & So's 4-H Sewing SPIN Club

   


We are so excited to announce the return of our sewing SPIN club!  the Sew & So's will meet August 18 and 19.  There will be two sessions each day.  The morning session will be from 9-12 for our beginning level sewers.  The meeting from 4:30-7:30 will be for our intermediate sewers.  Both sessions are open to Robeson County 4-H members who are actively enrolled in 4-H Online.  The club meetings are free and we will provide snacks for both groups and a boxed dinner for our intermediates.  Please note all current COVID protocols will be followed at the time of the meetings which may include social distancing, wearing masks and eating outside, etc.  We will email families closer to that time to let them know what the protocols will be at that time.  

  Both sessions will work on different projects and be able to complete their projects and a project record book by the end of the club meetings.  Due to the number of machines available there is limited spacing for both sessions.  However waitlists are available in case someone should drop out.   For more information about this club please contact Wendy Maynor, 4-H Program Associate at wrmaynor@ncsu.edu.

We have a District Officer in the House!



 We would like to offer Kennedi Lyons our congratulations after being appointed to the SE District Officer team.  Kennedi will serve as Secretary/Treasurer and have the opportunity to be on the planning team for Congress and other leadership events.  She will join Kaylee Lackey, Lillie Hansen, and Kyra on the district team and will also help plan and lead district events such as Winter Fling and Teen Retreat. 

  Kennedi received this honor after participating in this year's virtual 4-H NC Citizenship Focus and stepping up to participate in leadership opportunities.  She represented the her breakout groups well and was willing to speak publicly to the entire delegation. 

  Kennedi is part of the only all female district officer team and will be installed during 4-H Congress.  Feel free to give Kennedi a shout out in the comments and congratulate her on this new role.
